This coffee was gathered from select specialty smallholders located in the highlands of the famed Huehuetenango growing region near the towns of San Pedro Necta and La Libertad. Finca El Paternal and Finca Nueva Palmira are only two of the several farms that contributed to this shade-grown lot which was harvested with care before landing at the mill for processing and drying. The mill uses a combination of both patios and large drying machines called “guardiolas” to complete the process. The coffee is then separated by color via computer before further mechanical sorting by density and size. The results are a superior, clean, bright cup.
