Don Francisco and his wife Blanca Nieve (yes, Snow White) live very high up in the mountains of Jinotega, Nicaragua. Their farm, El Diamante (The Diamond), produces exceptional coffee that is grown in its natural, forest state which protects spring water that bubbles up to the surface. El Diamante is at such an incredible altitude that the farm's coffee is harvested a full two months after the rest of the country's crop due to the colder climate and increased cloud cover in this micro-climate. The slow maturation of the beans in this colder climate allow them to collect more nutrients, producing more complex flavors. Our importer, Gold Mountain Coffee Growers, works especially hard with Don Francisco to provide financing for growth, including improvements to the family truck so that the coffee can easily make the journey down the steep road from the top of the mountain into the valley for sun-drying. Don Francisco and family have also installed and expanded solar power to their home, improved their roof and workers' housing, and upgraded coffee-processing equipment and infrastructure. This coffee is comprised of two varieties grown at the El Diamante farm: red catuai and red caturra and the cup carries a solid black cherry flavor complemented by crisp apple and praline.
